Twice-Baked Potato

A classic twice-baked potato that’s easy to make and tastes great too.

1 Potato

  • 2 tbsp, 1 tsp sour cream
  • 1 tsp chopped chives
  • ½ tbsp minced garlic
  • ½ tbsp butter
  • 1/2 cup shredded cheese
  • ¼ tsp garlic salt
  • ¼ tsp pepper
  • 1 slice bacon cooked (optional)

Serves: 2

  1. Using a fork, poke holes in the potato. Place in 400 degree oven for 45 minutes to an hour, or until cooked completely through.
  2. Combine butter, chives, sour cream, garlic, ¼ cup of cheese, salt and pepper in a bowl. Crumble up cooked bacon (optional).
  3. Take cooked potato (while still hot) and cut in half lengthwise. Scoop out the inside with a spoon (be careful not to burn yourself) and combine with butter and sour cream mixture. It should be hot enough to melt cheese and butter. Stir until potatoes are mashed and everything is thoroughly combined.
  4. Take half of the mixture and place it into the first potato skin. Sprinkle 1/8 of cheese on top. Repeat with the second skin.
  5. Place on baking sheet and put back into oven until cheese is browned on top (about 5-10 minutes).
